The care-free days of summer are nearly over! Time to get back into the groove. Here we go again...

Monday - Snack wraps(my version of McDonalds snack wrap: tortilla, chicken strips, shredded cheddar cheese, lettuce, and ranch)

Tuesday - Crab Legs and Chanterelles

Wednesday - El Paso Burgers (Pampered Chef Recipe)

Thursday - Shrimp Linguine

Friday - Out!

* This salsa paired very nicely with marinated chicken breasts. Definte repeat, and really no recipe necessary.

* edited to add that I have no idea how to make gravy. The "pesto gravey" turned out more like dressing, which was actually ok as O pointed out because it was served over the greens.

Monday - Red Beans and Rice with Andouille sausage(an Ole creation)

Tuesday - Honey glazed chicken

Wednesday - Burrito bar

Thursday - Linguine and clam sauce(sauce from freezer)

Friday - Out!

From this point on, I will only mention main courses and sides(if noteworthy in my opinion). A vegetable, fresh fruit, spinach and/or lettuce salad, and whole grain bread are generally offered with dinner.

Also, we do eat on weekends, but that is generally when Ole gets creative in the kitchen. All his recipes seem to be in his noggin, so it is rather hard to put here. With the main purpose being organization, and the week days being the most hectic, Monday through Friday meals are those that I care to focus on.

We have a nasty habit of stopping by the grocery daily or every other day to pick up dinner fixings. Call it a lack of organization, or we just never know what we will want to eat. I tend to spend more than necessary because more often than not the children are with me, and they are always hungry it seems! Orgjunkie.com has the right idea about planning things out at the beginning of the week and sticking to it. We'll see how it goes.

Monday – traditional reubens and avocado reuben sandwiches, tomato soup

Tuesday – Whole wheat spaghetti and meatballs, romaine and spinach salad, crusty whole grain bread

Wednesday – 40 clove garlic chicken, sweet potatoes, romaine and spinach salad, sliced seasonal fruit

Thursday – Inviting ourselves to Grandma’s for din(she told us to!), or maybe Flatbranch

Friday – Kids having sleepover, so Shakespeare’s pizza and sliced seasonal fruit
